Description

The secret of balsamic vinegar has always been hidden in the wood of the old barrels in which the vinegar ages. Acetaia Giusti proudly preserves the largest collection of historical barrels in its attics: 600 barrels from 1700 and 1800 still in activity. The older the cask is, the better the product will be, because it will continue to release the essences of the wood and the balsamic aromas which over the years have been there and will keep getting better.

Just the great complexity of the maturation and aging systems, made in casks of different sizes and woods, is one of the key elements that will determine the quality of the final product, together with the careful selection of the raw material, mainly grapes from autochthonous vines such as trebbiano or lambrusco, and the system used for their slow cooking and more.

Gold Medal Balsamic Vinegar 90 years old

The “A3” cask was brought by Giuseppe Giusti to Florence at the Italian Exhibition organized by the Savoia family, obtaining a gold medal for a 90-year-old balsamic vinegar.

Giusti becomes the official supplier of the King of Italy and of the Royal House of Savoy, which grants him the privilege of using the royal coat of arms on his Balsamic Vinegars.

The Giusti Museum offers an extraordinary journey through the priceless heritage of objects and documents preserved for generations: from the ancient jars used for storage, to the tools used over the centuries by the vinegar makers, to the first bottles and advertising brochures of the early twentieth century. Among the most precious relics are centuries-old barrels such as the “A3” barrel with which Giuseppe Giusti presented himself in Florence in 1861 on the occasion of the Italian Exposition organized by the Savoys, obtaining a gold medal for a 90-year-old balsamic vinegar. Through documents and ancient objects of the trade, the museum traces the history of balsamic vinegar of Modena and its encounter with the Giusti family.
