PDO Traditional Balsamic Vinegar of Reggio Emilia Bollino Aragosta, is made by cooking grape must from selected vines in the province of Reggio Emilia alone. After a phase of acetification, it is refined and aged in barrels for at least 12 years, thus being submitted to the judgment of master tasters who give it its own classification. Use raw or for short cooking.
