“Giusti 50” and “Giusti 100” represent the most exclusive collection of the Giusti family vinegar factory. Produced each year in extremely limited quantities and extracted from some precious barrels produced since 1700. One of these casks, codified as A3, was brought by Giusti to the National Exposition of Florence in 1861 where the 90-year-old vinegar extracted from it won a oro medal, a success which was repeated in Paris at the Expo of 1889. The casket that contains them is composed of the 5 types of wood that make up the typical set of casks. The front label is engraved in 24-carat oro, while the back label is made with the ancient technique of movable type printing, using a nineteenth-century lead typeface from Modena. Extracted every year in limited quantities, Giusti 50 is a special reserve of Balsamic Condiment, aged for more than 50 years in the oldest barrels of the house. Characterized by a wide aromatic bouquet and an unmistakable bittersweet taste, it has intense woody and ripe fruit notes. Each bottle is numbered, and hand finished, kept in a casket with a small blown glass pipette. A unique product.
The olfactory examination shows a piercing and persistent scent, sweet, spicy and fruity, with balsamic and woody aromas.
