“SABA” is an ancient product that everyone knows, perhaps by other terms: “Sapa” in Sardinia, “Vin Cotto” in central/southern Italy.
It is the starting point that is used to create, in the provinces of Modena and Reggio Emilia, P.D.O. Traditional Balsamic Vinegar. Made from cooked grape must from Lambrusco, Trebbiano and Spergola grapes.
