Time, passion, care, attention and research are the main steps and secrets of this fantastic Balsamic Vinegar. In small barrels made of different types of wood it rests for more than 12 years and only after this long time is it evaluated by the Commission of certified tasters. After passing a rigorous examination, it is bottled and emblazoned with PDO certification. The tasters’ judgment is expressed by a score, which is necessary to classify PDO Traditional Balsamic Vinegar of Modena Affinato aged at least 12 years. The glass bottle in which it is packaged should be unique in shape and capacity. Such a small bottle designed by the famous designer Giugiaro is inspired in shape by the traditional Matraccio used by master tasters. Affinato is distinguished from Extravecchio by its burgundy-colored capsule.
Olfactory examination reveals a characteristic bouquet, fragrant, complex but well blended, penetrating and persistent, with evident but pleasant and harmonious acidity.
